Cake 1 Box Duncan Hines Yellow Cake Mix Eggs, Vegetable Oil, Water as per Box instructions. After well blended Add 2 Tablespoons Best Foods Mayonnaise 1/2 Cup Sweetened Coconut Flakes 1/2 Cup chopped Almonds, Toasted Bake in prepared pan, round or 1/4 sheet. 350 degrees approx 22 minutes. Set aside to cool. Buttercream Frosting 1 Cup sweet unsalted Butter, softened 3 -4 Cups C & H powder Sugar 1 teaspoon Pure Vanilla 1/4 cup Heavy Whipping Cream Beat butter, add sugar and continue to beat till well blended, add Vanilla and whipping cream. Beat approx 4 -5 minutes till light and fluffy. Transfer to bowl. Set aside. Cake Topping Heat small/medium skillet low/medium heat Add 1 tablespoon Butter 3/4 Cup Coconut Flakes 3/4 Cup Chopped Almonds Toast till lightly browned. Tossing and stirring. Remove to a paper towel lined plate. Set aside Cake assembly Cut 1/4 sheet cake into quarters.Trim top if needed, evenly. Frost layers generously with Buttercream filling. Frost top of Cake. Not necessary to frost sides. Sprinkle Topping over top of Cake.
3 oz Dark Chocolate, Bittersweet, or Semi Sweet Chocolate. Your preference Set up double Boiler low medium heat Add chocolate pieces and stir while chocolate melts. Remove bowl from heat. DON'T OVER Heat.THE CHOCOLATE WILL CONTINUE HEATING. SAFER TO REMOVE FROM HEAT EARLY. Keep stirring. Can transfer to a pipping bag or transfer to a small bowl to stop the heating. Once sauce has cooled down, using a spoon or pipping bag drizzle across and over top of cake to create a pattern. Refrigerate and chocolate will set nicely.

Almond Joy Cake Balls
Bake cake as directed. Refrigerate for several hours, a day. Crumble into medium size pieces. Drizzle in about 2 tablespoons Hazelnut Syrup. Toss around. Add in Chocolate shavings, Toasted Almonds, Toasted Coconut, Buttercream Frosting. Toss around to mix. Refrigerate til firm. An hour or so. Using a small cookie scooper, scoop balls onto candy liners. Makes about 90 balls. Can make a cake and use half for making Almond Joy Balls. Sprinkle toasted Coconut over top of each ball and or melted chocolate drizzle.
